Holbrook House set to open in The Conservatory at One Sansome in the heart of the Financial District

Join us Wednesday, September 6th at 10am for the Grand Opening and Ribbon Cutting Ceremony at the Holbrook House! Light bites and refreshments will be served.

The sumptuous Holbrook House, conceived by San Francisco hospitality industry veteran Phil Spiegel, is the jewel of a multifaceted hospitality concept incorporating the historic Albert Pissis-designed ground floor conservatory at the base of the soaring 42-story One Sansome tower in the heart of the FiDi. Launched by Spiegel’s PLEASE FIDI and Barker Pacific Group, the ambitious project aims to reignite the neighborhood, creating a new nerve center for social, professional, and civic activity in the West Coast’s most important business district.

Serving breakfast, lunch, and small bites in the evening, the Holbrook House’s hours of operation will be 8:00 a.m to 12:00 am Monday - Friday.

Captivated by the allure of culinary arts from a young age, Chef Stevens is a San Francisco native with more than two decades of hospitality industry experience.

She honed her craft at the prestigious California Culinary Academy before embarking upon a blockbuster career that has included successful tenures at legendary hotspots Bar Agricole and Delfina, as well as Michelin-starred institutions Aziza and Michael Mina. Her creative spark was on full display at Trou Normand, where she pioneered one of the Bay Area's first licensed in-house charcuterie programs. As the Director of Culinary Services for the Holbrook House and the overarching Conservatory at One Sansome project, Chef Stevens will continue to infuse her passion for local ingredients and seasonal flavors within her innovative culinary approach.

“Chef Stevens brings a unique blend of creativity, passion, and a deep understanding of the City’s fine dining ecosystem to our project,” said Spiegel. “She’s a true unicorn in the industry, and we’re lucky to be able to draw on her imaginative approach and two decades of expertise.”

Philip Spiegel and his team at PLEASE FiDi have been working on bringing Holbrook House to life for almost two years. The $25 million makeover of The Conservatory in One Sansome and the re-imagination of the North Lobby into a modern conference center will enable One Sansome to host up to 2,000+ guests at a time in the combined event space.

Hernan Martinez, originally from San Miguel del Allende, Mexico, is Holbrook House’s General Manager, bringing a rich cultural background and passion for gastronomy, including extensive experience from renowned establishments such as Eleven Madison Park, Cotogna, and Cosme in New York.
